- 25 g organic ginger
- 50 ml water
- 20 g sugar
- 50 ml lemon juice freshly squeezed
- 200 ml apple juice
- Cut the ginger into fine slices. Add the slices of ginger and sugar to the water, bring to the boil and simmer for 5 minutes.
- If possible, allow to steep overnight.
- Puree the syrup with an immersion blender to release the full flavor of the ginger. Finally, strain the mixture through a fine sieve. Add the lemon and apple juice. Enjoy well chilled.
