  1. Cut the ginger into fine slices. Add the slices of ginger and sugar to the water, bring to the boil and simmer for 5 minutes.
  2. If possible, allow to steep overnight.
  3. Puree the syrup with an immersion blender to release the full flavor of the ginger. Finally, strain the mixture through a fine sieve. Add the lemon and apple juice. Enjoy well chilled.
